
5 Tbsp of olive oil
1 1/4 lb. of Brussel sprouts and 1 1/4 lb. carrots
1 Tbsp of Ranch Dip Seasoning
6-8 chicken thighs with bone
Preheat oven 400 degrees, lightly coat pan with 1 tsp of olive oil, toss sprouts and carrots w 2 tsps of olive oil, salt & pepper and 1 tsp of ranch seasoning. Season chicken with 2 tsp of ranch seasoning. Place chicken over vegetables and sprinkle w/ 2 Tbsp of olive oil and 2 cloves of garlic crushed. Bake for 30-40 minutes.
